If we start with the Land FX default block colors, then assign colors that correspond to our own pen tables, then we get blocks that work with our pen tables.
But if we mistakenly hit it again, we shuffle everything again, and it corresponds to nothing.

Say we change 7 to 6 and 6 to 4, then the second time we run it, what was 7 is now 4, even though we want it to be 6.
Is there a way to see what each block layer is set to? or reset it to the original LandFX colors?

How are you converting the layer colors?
In the Preferences screen, you can configure the block layer colors that need to be changed, and then those layers will be changed without any further action. So there is no risk of accidentally running the process more than once. That is all covered here:

In a situation like yours with a questionable state, the best bet is to simply sort all layers by color, and manually adjust as necessary. Our layer naming should make this a fairly quick process.
