Is there a way to not include plant shadows when doing color render? I always end up having to go back to plant shadows and turn them off.

There currently is not, your workflow is correct in simply going to Shadows to turn them off.
There was talk of integrating the shadow options into the Color Render dialog, but we opted against that.
